Refresh yourself with tzatziki!

This delicious dairy dish is a favorite every Shavuot (the Feast of Weeks.) We serve it as a cold soup. It is also wonderful as a dip and even as a spread on toast!

Ingredients:

1 big container yogurt (plain or goat or greek)

500ml (18 fl oz)

3-5 cloves of garlic, minced

6 large cucumbers, peeled and shredded

2 tablespoons Holive Oil

4 small cucumber pickles (pickled in brine not vinegar), shredded

Kosher salt to taste

Freshly ground black pepper to taste

A tablespoon of fresh dill finely chopped (not the stems)

5 drops of fresh lemon juice or a 2 teaspoon of organic apple cider vinegar

Directions:

Stir everything together and refrigerate for a few hours or overnight

Serve cold! Yum!
