Add Some Serious Flavor to Your Cooking: How to Make Infused Extra Virgin Olive Oil with Rosemary and Garlic

Here's how to make it:

Step 1: Gather your ingredients. You'll need a few clean sprigs of fresh rosemary and a few cloves of garlic, as well as some great extra virgin olive oil.

Step 2: Crush the peeled garlic cloves and rosemary sprigs a bit with a meat tenderizer (if you don't have one you can use a heavy jar.)

Step 3: Place the rosemary and garlic in a clean empty bottle or jar (we use bottles that have run through the dishwasher and then been air dried to ensure they are totally dry.)

Step 4: Pour enough extra virgin olive oil into the bottle to cover the rosemary and garlic.  Leave a bit of empty space on the top of the bottle.

Step 5: Seal the bottle and store it in a cool, dark place for at least a week to allow the flavors to infuse. You can shake the bottle gently every few days to help the process along.

Step 6: After a week, your infused olive oil is ready to use. Simply pour it over your dishes to add some serious flavor and aroma.
